In charge of the brand's artistic direction, she shares with us her "declaration of love to chocolate" with her cocoa mousse made with collagen. "It's super delicious, easy to make and contains a daily dose of collagen."
It's often said that the simplest things are the best. Our Artistic Director Maïlys Canova is no exception to this adage, showing us step by step how to make her signature dessert. An airy chocolate mousse, to which she adds a dose of Bain de Minuit collagen - a variant of Apnée collagen that also contains raw cocoa. Bingo.

2 small mousses
Bain de Minuit collagen
1. Ingredients for 2 collagen mousses
For two servings, you need:

50 grams of dark chocolate (minimum 70%, ideally made from raw cocoa to preserve its virtues)

2 eggs

1 pinch of fleur de sel

1 stick or 2 measuring spoons of collagen Bain de Minuit

½ sachet of vanilla sugar (optional)
Optional topping: a few raspberries and blueberries.
2. Preparation
Step 1: Separate the whites from the yolks
Set the yolks aside.
Step 2: Beat the egg whites until stiff.
Add a pinch of fleur de sel to the egg whites. Beat the mixture. Maïlys' tip: to know when it's ready, turn the bowl upside down. The whites should not spill over.
Step 3: Melt the chocolate in a bain-marie.
Step 4: Remove from the heat, add the egg yolks.
Then add the dose of Bain de Minuit collagen and the vanilla sugar to the melted chocolate. Mix everything well with a flexible spatula.
Step 5: Add the egg whites.
Mix very delicately with the flexible spatula, until you obtain a homogeneous texture.
Step 6: Pour the preparation into two glasses or ramekins.
Refrigerate for at least two hours before serving. It's ready!

FAQs
Is collagen less effective in a recipe?
The effectiveness of collagen is not altered when incorporated into a recipe. However, we recommend incorporating it into raw recipes, i.e. without heating. Why? While collagen does not lose its effectiveness when exposed to heat, the same cannot be said for some active ingredients, such as the vitamin C present in Bain de Minuit. They should not be exposed to temperatures exceeding 80°. That's why we're proposing a no-heat recipe to preserve all the benefits of your cure!
Is there a time during the day when it is best to consume collagen?
The answer is no. Right now, there are no scientific studies demonstrating that collagen is more effective when consumed on an empty stomach, for example. So you can enjoy your collagen whenever you like during the day, without affecting its effectiveness.
Which chocolate to choose for this recipe?
We recommend using a dark chocolate with a minimum 70% raw cocoa base, to preserve all the cocoa's virtues (especially its antioxidant properties).
